Negroamaro

Grape Variety: 100% Negroamaro, Salento IGP

Tasting Notes: Deep red in colour with violet reflections. Floral and spicy aromas of rose petals, violets, white pepper, cinnamon and Mediterranean scrub, with refreshing minty notes. On the palate, elegant and clean, with firm yet velvety tannins, perfectly integrated with the fruit. Concentrated, with a remarkably persistent finish.

Production Area: Produced from vineyards over eighty years old, located in the Alto Salento area, in Lizzano.

Winemaking: Warm fermentation on the skins and cold fermentation of the must, with malolactic fermentation induced simultaneously with the primary fermentation.

Maturation: The wine rests in concrete tanks for two years, followed by bottle ageing for at least one year.

Recommended Food Pairings: Enjoyable on its own for a truly magical moment, it pairs beautifully with mature and full-flavoured cheeses, risottos, winter soups, baked lamb and complex roasts.
