Our raw puntarelle in oil come from a short, controlled supply chain. We use only locally grown Catalogna chicory, hand-selecting the most tender shoots from the Galatina area in the province of Lecce.

;The puntarelle are processed raw, without industrial treatments; they are left to mature for a few days in a delicate sweet-and-sour brine and then preserved in oil without added flavorings or artificial preservatives. This simple processing method respects the raw ingredient and preserves its crunch, natural flavor, and nutritional properties.
