The tomatoes are selected from premium varieties and hand-picked in the height of summer, only when they reach perfect ripeness. The red, meaty flesh thus retains all its natural flavor.

Drying is done using traditional methods in our outdoor spaces: the tomatoes are cut and salted by hand, one by one, and left to dry in the sun for 4–5 days on racks, without any industrial processes, to preserve their aroma, texture, and organoleptic properties.

Time is the main ingredient in this product: 130 hours of processing and 10 kg of fresh tomatoes are needed to produce 1 kg of sun-dried plum tomatoes. The final step takes place in our workshop, where we season them with capers, garlic, and a subtle hint of spice to enhance their rustic, Mediterranean character.

Delicious served raw, on bruschetta, and in appetizers, they also surprise as an aromatic base for sautéed vegetables, pasta dishes, and gourmet recipes.
