Artisanal tradition, the authentic taste of yesteryear

Our rustic eggplant strips in oil were inspired by a childhood memory: the aroma of homemade preserves, when Grandma would open her summer jars and serve them on a slice of whole-wheat bread. Today, that flavor lives on, carefully preserved in our jars.

The eggplants are grown in Salento, where they are harvested by hand between August and September. The processing strictly follows traditional methods: each eggplant is selected, washed, peeled, and cut into thin strips—all by hand.

Just as our grandmothers taught us, we let them drain in salt—“allu carcu”—to naturally remove the bitterness. Finally, we season them with fresh mint and capers, and jar them in oil, without artificial preservatives.
